An Erie Christmas

Dave, Alex and I had a blast in Erie/Denver with the Fryer's, mom, and Gerald for Christmas. We went to Zoo lights. It snowed a lot and the lights were great, I was just hoping to see more animals.

Alex's first Carousel ride. He didn't seem to care very much about the experience until we had to get off.

We had fun hanging out at the Fryer's beautiful new home! They were amazing hosts. We all had our own rooms, toiletries waiting for us, lots of yummy food, and a great schedule of events to fill our time.

Dave and I made a quick stop to Aunt Jera and Uncle Dave's house as well as a drive by his old house (below) and highschool

Elly and Scott even planned a date night. It was so much fun they got a sitter for the 3 little boys and all 6 adults went to dinner and a movie!

Scott pulled off the most amazing surprise for Elly for Christmas. He made her dreams come true (literally) when he got her a pilates reformer/Cadillac so she can teach in their basement! Look at her face! (Joy, love, excitement) 

How cute are they. Scott is so sneaky. 

Then we had to leave the next morning and head back to reality. We miss you Fryers and Kinlaws. Love you.

Healthy Pancakes - modified

So this morning I decided I wanted to make whole wheat pancakes. I found a great recipe on Janetha's Meals and Moves blog. I modified her recipe a little bit. They were really yummy and easy. Too bad I didn't wake up in time to make them for Dave too. Next time.


Whole Wheat Yogurt Pancakes

ingredients:
  • 1/2 cup whole wheat pastry flour
  • 2 tsp baking powder
  • 1 TBSP sweetener of choice (I used honey)
  • 1/3 cup + 1 TB milk 
  • 2 TB plain Greek yogurt 
  • 1 large egg 
  • 1 tsp vanilla extract
  • a pinch of salt
  • 1 TBSP ground flax seed
*Changes I made to Janetha's recipe: I used honey, she used xylitol,  I used a whole egg, she used an egg white, I also added the salt and flax seed to her recipe. 


*She made 6 medium sized pancakes and I got 4 out of it.
